How to Cook Asparagus

Steam in an inch of water

Coat with olive oil and Roast @ 425ºF for 15 min.

Stir fry in olive oil in a hot wok or skillet

Coat larger spears in olive oil and grill

Serve raw on a relish tray

Mix into Casseroles
How to Freeze Asparagus

Rinse asparagus and cut off woody ends
-
Blanch in boiling water for 2-3 minutes

Plunge into ice water until cool
-
Pack into freezer bags
-
Use within one year.
Asparagus Egg Salad Tea Sandwiches
1 bunch thin asparagus, trimmed & cut into ½ in pieces
4 hardboiled eggs, chopped
1 avocado, chopped
¼ cup mayonnaise
¼ cup plain yogurt
¼ cup minced red onion
1 tbsp. lemon juice
1 tbsp. Dijon mustard
Salt & pepper
White/wheat sandwich bread
Cook asparagus in salted boiling water until crisp-tender, 2 minutes. Drain and transfer to ice water to cool; drain and pat dry. Mix with hard-boiled eggs, avocado, plain yogurt, mayonnaise, red onion and lemon juice and Dijon mustard; season with salt and pepper. Spread between bread slices; trim the crusts and cut into triangles or squares.
Creamy Chicken & Asparagus Pasta Dinner
1 (8oz) boneless skinless chicken breast - even thickness
Salt & pepper
Italian seasoning
6 oz fettuccine
1 cup chopped asparagus (1-inch pieces) trimmed
Sauce:
1/4 cup (2oz) butter
1 cup half and half
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1/2 cup (2oz) shredded Parmesan cheese
Sprinkle both sides of your chicken with salt, pepper & Italian seasoning. Heat medium skillet over medium-high, greased. Place chicken in pan. Cook each side for 4 - 8 minutes. Transfer chicken to plate. Cook pasta according to package. In the last 3 - 5 minutes of cooking time, add asparagus to water. Drain & set aside. In medium saucepan over medium, melt butter. Add half and half, garlic powder, salt, pepper, & cayenne. Bring to simmer, cook 5 - 8 minutes, until slightly thickened. Do not allow fully boil. Stir in Parmesan until melted & pour over noodles & asparagus. Transfer to bowls, chop or slice chicken breast & serve over top of pasta. Garnish with more Parmesan and enjoy!
